WHAT IS ALOO BAINGAN KI SABZI/ Eggplant ?

Aloo baingan ki sabzi is a simple yet delicious vegan & gluten-free Indian vegetable recipe.


Aloo is the Hindi word for potato and baingan for eggplant so basically, this dish is made by cooking potatoes and eggplants with onions, tomatoes, green chilies, ginger, garlic, and a few spices.


Even this simple recipe has different variations and I love almost all of them. Today I am sharing the most common method of making aloo baingan also called baingan aloo by many.


In Indian cuisine we make lot of curries with potatoes as they enhance the taste of the dish. Some combinations of veggies really go well together. Aloo and baingan is one such that pair beautifully in a stir fry or curry.


Ingredients

1 pound potatoes (alu)

1 pound eggplant (began)

2 medium onions, chopped

1/4 tablespoon ginger paste or powder

1/4 teaspoon garlic paste or powder

2 medium tomatoes

1/4 teaspoon cumin powder

1/4 teaspoon turmeric powder

1/4 teaspoon coriander powder

Salt to taste

3 tablespoons oil

1/2 cup chopped cilantro


Instructions


Cut potatoes, eggplant and tomatoes in small cubes.

Heat the oil in a pan. Fry the onion for 1 minute.

Add garlic, ginger, cumin, turmeric and coriander; mix together for 2 minutes.

RECIPE TIPS & TRICKS

Though aloo baingan can be made with any type of eggplants, a long variety like the Japanese eggplant is the best for this recipe.

Never add water to aloo baingan and let the vegetables get cook covered in their own moisture.

Cut equal-sized pieces of potato and eggplants.

Use a heavy-bottomed pot to make aloo baingan ki sabzi.
